Molte sono le persone che hanno l'impastatrice; io preferisco la manualità. Non è solo per il risultato finale che a volte non giustifica nemmeno il tempo impiegato. Trovo però rilassante e piacevole impastare, magari con della buona musica e, perché no, in compagnia. A parte sbriciolate il lievito aiutandovi con un poco della farina setacciata, unitela al resto mischiando grossolanamente e versate su una spianatoia formando una fontana piuttosto larga. Versate all'interno della fontana i restanti ingredienti (acqua, latte, olio, sale) e iniziate a integrare la farina aiutandovi con una forchetta con movimenti rotatori. Più cura avrete in questo passaggio, maggiormente omogeneo risulterà l'impasto da subito. Quando il liquido sarà quasi assorbito del tutto, integrate la restante farina aiutandovi con una spatola e iniziate a lavorare la pasta. Il movimento è quello classico: una cosa che vorrei sottolineare è che non si deve dare troppa forza nello spingere con il palmo, ma prediligere la velocità. L'impasto dovrà risultare liscio, omogeneo, morbido e &amp;nbsp;umido appena al punto da non attacarsi né alla spianatoia né alle mani. Mettetelo a riposare in un contenitore appena infarinato e sufficientemente ampio e alto, avendo cura di coprire con un canovaccio umido. L'impasto avrà raddoppiato del suo volume dopo 2 ore ( la temperatura ambiente e l'umidità saranno le variabili) ma consiglio di far lievitare circa 4 ore.
